I so appreciate your votes! It’s been a fun ride. I started this blog last month and expected to “lay low” for a couple of months until I figured out this new language. Well … so much for that.

Thanks to The Homeschool Post , I was motivated to just jump in! I’m finding my footing and loving this whole process. I keep running into people who say they’re reading – and that just makes my day! If you’re reading – I’d love to hear from you! Oh yea, looks like I came in second. They’ll announce an official count soon.

Meanwhile ~ Thanksgiving is coming!

I want to share this amazing recipe. I don’t usually do that – but this isn’t just any recipe. It’s my husband’s Aunt Agnes’ cornbread dressing. She’s in her 90′s and is known all over her town for her cooking. This is undoubtably the BEST STUFFING I HAVE EVER HAD! If you’re looking for a recipe – here it is. :) Enjoy!

Holiday Stuffing

Aunt Agnes' cornbread dressing recipe - in her own words

“Bake 3 packages of cornbread mix, 3 cans of biscuits or 1 large loaf of bread. Crumble in large pan.

Add 2 or 3 cups water and 3 cans chicken broth or cook 1 whole fryer parts for broth.

Dice 2 large onions in small pieces, 1/2 stalk celery diced small. Beat 3 eggs, 1 large tablespoon black pepper, 2 large tablespoons of ground sage and  and 2-3 tablespoons of salt. Add all of this to the crumbs. DO NOT saute celery and onions this will take away the fresh taste!

Work all together (if it’s too thick, add more broth) until it’s about the consistency of very thick gravy. Let stand quite a while. Stir occasionally (if you must) or wash your hands very good and mix that way!

Cover with foil and bake at 350 degrees for 1 and 1/2 hours.”
